How to Use Olive Oil to Make Mayo

Drinking olive oil benefits. Adored by many, mayonnaise is one of the most widespread sauces used for dipping and cooking. What many might not know though, is that Olive Oil can be used to make a tastier and healthier mayo. The recipe doesn’t require many ingredients or masterchef skills, but can be quite laborous. Below, we’ll show you how to do it.

 

You only need 4 Ingredients:

  • Olive Oil- About one and a half cup.¬†It doesn’t need to be extra virgin since you don’t want a particularly strong flavour in your oil so normal olive oil can work just fine, or you might want to spice it up a bit and use an olive oil infused with aromatics or fruits. See our recommendations at the end of the article for more details.
  • 1 Egg– The fresher the better. You should add about one week to the expiration date on the lid to arrive at the expiration date of the mayo you’re about to produce.
  • 2 tablespoons of lemon.
  • 1/2 teaspoon of dry mustard.
  • Salt to taste

How to Prepare it

Now that you’ve assembled all the ingredients, simply blend toghether the lemon, eggs and mustard. Finally, slowly pour the olive oil into the lemon egg mustard mixture, making sure it emulsifies. This is the laborous side of the task, as you should take up to 5 minutes to slowly mix the olive oil into the mixture. The amount of care you put into this stage will directly translate into the consistency of the sauce.

If you want to add an extra touch, you can also at this stage mix in your favourite herbs or garlic.
